Sweet & Spicy Chili Sauce

Believe me when I tell you that you NEED this sauce in your life.  I wanted a perfectly balanced sauce to drizzle over the kalua pork I make for my hubby and after several tries, THIS is definitely it.  It’s sweet, it’s spicy, it has a little bit of acidity, and it’s absolutely PERFECT over that salty, smokey deliciousness.  Try it with pork chops, grilled chicken, in a stir fry… it is so versatile and keeps in a glass jar in the refrigerator for up to a couple of weeks.  I have to warn you, once you start eating it it’s very hard to stop!

Ingredients:

  • 1/2 cup pineapple juice
  • 2 Tbsp rice vinegar
  • 2 Tbsp lime juice
  • 1/4 cup samba oelek
  • 1/4 cup hoisin sauce
  • 1/2 cup honey
  • 1 tsp fresh grated ginger

Instructions:

  1. In a saucepan, stir all the ingredients together and bring to a light boil.  
  2. Reduce the heat and simmer uncovered until reduced to where it coats the back of your spoon, about 20 minutes.  
  3. Remove from heat, let cool, then transfer to a glass jar or other airtight container and store in the refrigerator.
