Believe me when I tell you that you NEED this sauce in your life. I wanted a perfectly balanced sauce to drizzle over the kalua pork I make for my hubby and after several tries, THIS is definitely it. It's sweet, it's spicy, it has a little bit of acidity, and it's absolutely PERFECT over that salty, smokey deliciousness. Try it with pork chops, grilled chicken, in a stir fry... it is so versatile and keeps in a glass jar in the refrigerator for up to a couple of weeks. I have to warn you, once you start eating it it's very hard to stop!
Ingredients:
1/2 cup pineapple juice
2 Tbsp rice vinegar
2 Tbsp lime juice
1/4 cup samba oelek
1/4 cup hoisin sauce
1/2 cup honey
1 tsp fresh grated ginger
Stir all the ingredients together and bring to a slow boil. Reduce the heat and simmer uncovered until reduced to where it coats the back of your spoon, about 20 minutes. Remove from heat, let cool, then transfer to a glass jar and store in the refrigerator.
