Slow Cooker Au Jus Beef Sandwiches

My hubby is a big fan of French dip sandwiches, so I wanted to make a super easy crock pot (slow cooker) recipe with beef that I could throw in early in the morning and forget about till dinner time AND I wanted it to be SO tasty that he would think I had been slaving over it all day. 😉  This shredded beef French dip sandwich dinner is definitely one of his favs, so much so that he will request it for special occasions like his birthday or Fathers Day when I give him the choice of ANYTHING he wants, and he always eats any leftovers for both breakfast and lunch the next day!

The flavor of Worcestershire sauce mixed with beef broth and beefy onion soup mix makes one mean au jus!  I mean the kind of au jus that you will want to literally drink it’s so flavorful.  This meat is so tender it just melts in your mouth.  Add caramelized onions, shredded gruyere cheese and a little Dijon mustard on an crusty roll and you have yourself one hell of a sandwich, but you can honestly make it as simple as you like and you won’t be disappointed.  When it comes to cheeses, Gruyere, Munster, Swiss or provolone cheese all go really well with this and take it next level, but even plain cheddar is beyond delicious!

Note:  I have started making my own dry beefy onion soup mix and store it in the pantry in a mason jar.  It’s way cheaper than the packets, sooooo yummy and it means I always have it on hand!

Ingredients:

  • 3-4lb beef roast, (I like rump but will use whatever I have on hand)
  • 40oz beef broth
  • 1 Tbsp Worcestershire sauce
  • 1 tbsp minced garlic
  • 4 Tbsp dry beefy onion soup mix
  • 1 tsp dried oregano

Instructions:

  1. Mix the Worcestershire sauce in to the beef broth.  
  2. Place the roast in the slow cooker and pour the beef broth mixture around it.  
  3. Rub the garlic in to the top of the roast.  
  4. Sprinkle the onion soup mix and oregano on top and cook in your slow cooker for 8 hours on low.  
  5. When the roast is fork tender, pull apart with two forks and serve in crusty rolls.  Serve the au jus on the side to dip the sandwiches in.

I serve on crusty rolls with dijon mustard, shredded cheese (I love gruyere) and caramelized onions!
