Fresh is definitely best. We have made this pico de gallo for as long as I can remember and absolutely love it with tacos, fajitas, Cafe Rio salads, or just with tortilla chips.
Ingredients:
4-6 roma tomatoes, chopped OR 8oz sliced cherry tomatoes
1 onion, diced
1 jalapeno diced (remove seeds if you don't want it too spicy)
1/2-1 bunch cilantro, finely diced
Juice of 1 lime
1-2 tsp sugar
dash salt and pepper
Gently stir everything together and let sit covered for at least 30 minutes in the refrigerator. Serve.
