Magic Cookie Bars (Seven Layer Bars)

These Magic Cookie Bars, also known as Seven Layer Bars are my daughter Dee’s absolute favorite treat.  We always have to plate some up to share with our neighbors immediately or we will literally eat the entire pan ourselves in a night, no joke.  They are just gooey, chocolaty deliciousness in a quick and easy to throw together recipe. 

I originally got this recipe from an old “Eagle Brand” cookbook when I first got married, but we have tweaked it a bit since then because we like a thicker crust and we like to add white chocolate chips too. You can play around with any flavor chips you like… butterscotch, peanut butter, mint… just replace the white chips with whatever flavor you want to try! 

Ingredients:

  • 2 sleeves graham crackers, (16-18 whole crackers)
  • 1/2 cup butter, melted (1 stick)
  • 1 cup chopped nuts, (pecans or walnuts)
  • 1-1/2 cups semi-sweet chocolate chips
  • 3/4 cup white chocolate chips, (or whatever flavor you like)
  • 1-1/4 cups sweetened flaked coconut
  • 1 (14 oz) can condensed milk

Instructions:

  1. Heat oven to 350°F. Spray 13×9-inch baking pan with no-stick cooking spray. 
  2. Throw the graham crackers in the food processor and give them a whirl until finely crushed. 
  3. In a mixing bowl, combine the graham cracker crumbs and melted butter.  Press crumb mixture firmly into bottom of prepared pan.  
  4. Layer the nuts, semi-sweet chocolate chips, white chips and then coconut over the crust.  
  5. Pour sweetened condensed milk evenly over the top of everything.  (Don’t worry about the condensed milk sitting on top of all the ingredients, this is correct!  It will melt down through all the ingredients during the baking process.)
  6. Bake 25 to 30 minutes or until lightly browned.  
  7. Cool on a wire rack for a couple of hours. Cut into bars.  

Note:  I love to sprinkle some edible dried rose petals over these before serving because they really just make them so beautiful, but don’t change the flavor at all.
