No Bake Key Lime Cheesecake Pie Jars

This is a dessert jar variation of what has been my hubby’s very favorite dessert since we were married,  (this no-bake quick and easy key lime (or lemon) pie.)   I love this basic no-bake pie recipe because it takes just a few minutes to throw together and you don’t have to turn on the oven so it’s perfect for the warmer weather.  I also specifically love the presentation of this in the little jars… everything is already portioned and you literally just hand everyone a jar and a spoon!  No awkward pie cutting and serving and no mess!

Ingredients:

Graham Cracker Crust Layer:

  • 2 cups graham cracker crumbs
  • 1/3 cup sugar
  • 1/2 cup melted butter

Key lime filling layer:

  • 14oz can condensed milk, (NOT evaporated milk)
  • 8oz block of cream cheese, room temp
  • 1/3 cup key lime juice
  • 1 tsp vanilla

Whipped cream top layer:

  • 2 cups heavy whipping cream
  • 1/3 cup sugar
  • 1 tsp vanilla

Instructions:

  1. You will need (8) 8oz mason jars for the above quantities.  (Wash and dry the jars and lids ahead of time.)
  2. For the graham cracker crust, mix the graham cracker crumbs, sugar and melted butter together until well combined and divide the mixture evenly between all 8 jars, (about 1/4 cup per jar.)  Gently press the mixture down to the bottom.   
  3. For the key lime filling, in a medium mixing bowl, use a hand mixer to whip together the condensed milk and cream cheese until smooth.  Stir in the key lime juice and vanilla.  Spoon equal amounts of the mixture in to each jar on top of the graham cracker crust.
  4. For the whipped topping, in a clean mixing bowl, whip together the heavy whipping cream, sugar and vanilla. until you have medium peaks.  (Cream stands at a point when you pull the whisk out.)  Spoon the cream in to the jars on top of the key lime filling to fill the jar.
  5. You can store these in the refrigerator with the tops on till ready to serve or just serve them immediately.  If you want to be a bit more fancy you can choose to garnish with a little lime zest, some grated chocolate, or a slice of lime!
