Ingredients:
16 oz bag of frozen corn
1 jalapeno, seeded and finely diced
1/2 cup finely diced red onion
1/4 cup chopped cilantro
Juice of 1 lime
1 tsp salt
1/4 tsp fresh ground pepper
1 tsp sugar
Put the corn in a colander and run cold water over for a couple of minutes to partially defrost it. Toss everything together in a bowl and mix well. Cover tightly and store in the refrigerator until time to serve!
Note: You can also add some canned black beans and/orchopped tomatoes to this to bulk it up as a salad if you like! Just drain and rinse the beans before stirring in.
