Carne Asada Lime & Cilantro Marinade

I have a confession.  I LOVE Chipotle's steak burritos.  I mean to the point where we go almost every weekend to get one!  I love the combination of flavors... the cilantro lime rice, fajita veggies, steak, fresh tomato salsa, corn salsa, sour cream, cheese and lettuce... all stuffed in a perfect tortilla.  Seriously, I think I could just eat that every day and be the happiest camper.

Well I fancied it tonight BAD but we are have been trying to do more home cooking on weeknights, so I figured what the heck.  I'll attempt to make my own and give the family a treat.  This Carne Asada marinade was delicious and only took a few minutes to throw together.  I made cilantro-lime rice, a quick copycat Chipotle corn salsa, some fajita veggies and some spicy black beans for the hubby.  We served it on tortillas with sour cream, fresh tomato salsa and cheese and it was  If you want to curb any kind of fajita craving, give this a try!

  • 2/3 cup olive oil
  • 3 Tbsp lime juice
  • Zest and juice from 1 fresh lime
  • 4 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chipotle chili powder
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup fresh cilantro chopped
  • 2 lbs Carne Asada steak, (super thin)
  1. Combine all the marinade ingredients in a large Ziploc bag.  
  2. Add in the steak, seal the bag and squeeze it all around until  the meat is fully coated.  Let marinate a minimum of 1 hour on the counter, or if it's going to be longer, put it in the refrigerator.  (Take out about an hour before you are going to grill.)
  3. When ready to cook, preheat your grill until nice and hot.  Grill on high heat for 1-2 minutes each side.  (It will cook super fast.)  Cut against the grain in to strips and serve immediately.  (Or make your family wait until you take 100 pictures like I do 80% of the time. 😂)
