Easy Chocolate Chip Cheesecake



When Mike and I first started dating he had never tried cheesecake before.  His mom is pretty fussy to say the least and only eats a handful of foods so that fussiness was passed down to him in a major way.  He literally thought cheesecake was made out of cheese!!!  One day I insisted he have a bite of mine and the first thing that came out of his mouth was that he couldn't believe he had wasted 19 years of his life not eating this delicious food.  Cheesecake is definitely his all time favorite dessert and this is a very easy recipe that I ended up making quite frequently when we first got married.

Crust:
¼ cup melted butter
1 ½ cups Oreo cookie crumbs or graham cracker crumbs

Filling:
3 packages (8oz each) cream cheese, softened (don't use fat free)
1 can sweetened condensed milk
3 eggs
2 tsp vanilla
1 cup mini chocolate chips
1 tsp flour



Combine butter and crumbs.  Press in to the bottom of a 9” springform pan.  

In a large mixer bowl beat cream cheese until fluffy.  Add sweetened condensed milk and beat till smooth.  Add eggs and vanilla and mix well.

In a small bowl, combine ½ cup of mini chocolate chips with the tsp of flour.  Toss to coat.  Stir in to the mixture and pour the mixture in to the crust.  

Sprinkle the remaining chocolate chips over the top.  Bake for 1 hour at 300 degrees F, or until cake springs back when lightly touched.  Cool to room temp and then chill until serving.
