Frosted Banana Bars


This is a favorite family recipe from long ago first made/discovered by my sister, Carole.  Mike Jr loves anything banana bread like, and so I knew he would love these. You don't have to add the frosting.  We usually make it but leave the bars unfrosted and let people frost them as they eat them if they want to.

Bars:
1/2 cup butter or margarine, softened
2 cups sugar
3 eggs
1-1/2 cups mashed ripe bananas (3 medium)
1 tsp vanilla extract
2 cups A.P. flour
1 tsp baking soda
pinch of salt


Frosting:
1/2 cup butter or margarine
1 8oz package cream cheese
4 cups powdered sugar
2 tsp. Vanilla extract


For Bars:  In a mixing bowl, cream the sugar and butter.  Beat in eggs, bananas, vanilla.  Combine the flour, baking soda and salt and add it to the creamed mixture.  Mix well. Pour into greased 15x10x1 pan if you like them thin as pictured above, but you can use a 13x9 if you like thicker bars.  Bake at 350⁰ for 20-25 minutes depending on how thick they are.  Cool before frosting.

For Frosting:  Cream the butter and cream cheese in a mixing bowl.  Gradually add sugar and vanilla.  Beat well and spread over the cooled bars.
