Mike’s Favorite Chipotle Salsa

About a year and a half ago we went to a car dealership down in Lindon to buy a car.  While we were there they were doing a cookout for the customers and they did grilled meat on tortillas with sour cream and an amazing chipotle sauce.  We asked them where they bought it from, but I guess a temp had picked it up and no one was sure from where.  Thus started my mission to try and recreate it.  

What we ended up with was a super ugly but absolutely addicting chipotle sauce which has become my hubbies absolute favorite salsa.  He makes it once a week and then snacks on it literally all week with tortilla chips, however we also use this as a sauce with grilled meat or on tacos or whatever we want.  As a note, this salsa/sauce is quite spicy, so If you like things less spicy, simply reduce the amount of chipotles in adobo.

 

Ingredients:

  • 5-6 tomatoes (we like roma or campari)
  • 1 red onion diced
  • 1/4 cup canola oil
  • 1/2 cup honey
  • 1/4 cup balsamic vinegar
  • 1/4 cup Dijon mustard
  • 1/2 can chipotles in adobo
  • zest and juice of 1 lime
  • 1/2 bunch cilantro
  • 2 tsp minced garlic
  • 2 tsp cumin
  • 1 tsp salt
  • Cracked black pepper

Instructions:

  1. Throw all ingredients in the blender and blend until completely smooth.
  2. Refrigerate for at least 4 hours prior to eating so it gets nice and cold.  (Store in an airtight container in the refrigerator.)

The most addicting chipotle sauce or salsa made from tomatoes, red onion, cilantro, chipotles in adobo, honey, balsamic and all kinds of spices!

Notes

This salsa/sauce is not the prettiest sauce you will ever see - but it is the most addicting.
