About a year and a half ago we went to a car dealership down in Lindon to buy a car. While we were there they were doing a cookout for the customers and they did grilled meat on tortillas with sour cream and this amazing chipotle sauce. We asked them where they bought it from, but I guess a temp had picked it up and no one was sure from where. We went all over trying to find this sauce, but we were ultimately unsuccessful, so I decided I was going to try and recreate it. What we have here is what we ended up with after several attempts. This one came closest to what we had tasted. This has become Mike Sr's absolute favorite salsa. He makes it once a week and then snacks on it literally all week with tortilla chips, however we also use this as a sauce with grilled meat or on tacos or whatever we want.
Ingredients
5-6 tomatoes (we like roma or campari)
1 red onion diced
1/4 cup canola oil
1/2 cup honey
1/2 cup honey
1/4 cup balsamic vinegar
1/4 cup Dijon mustard
1/2 can chipotles in adobo
1/2 can chipotles in adobo
zest and juice of 1 lime
1/2 bunch cilantro
1/2 bunch cilantro
2 tsp minced garlic
2 tsp cumin
1 tsp salt
Cracked black pepper
Throw it all in the blender and blend until smooth. Store in an airtight container in the refrigerator. As a note, this salsa is pretty spicy. If you like things less spicy, simply reduce the amount of chipotles in adobo.
